On a busy afternoon, when you feel too lazy to cook anything, what is better than reaching for the pack of instant noodles. A little something that can be made of leftover rice, curd and spices in under 2 minutes. Yes curd rice, one of my favourite south indian rice dishes. SUPER EASY, and super quick!
Cooked rice ( preferably basmati). 1 cup
Curd 1 cup
Oil. 1 tbsp
Cumin seeds. 1/2 tsp
Mustard seeds. 1/2 tsp
Asafoetida. A pinch
Red chilli powder. To taste
Salt. To taste
Chopped green chilli. 1
Curry leaves 6-7
Coriander leaves. For garnish
How to make it
1) In a heavy bottomed sauce pan, heat the oil.
2) Drop in all the ingredients except rice, curd and coriander.
3) Once the mustard seeds begin to splutter add the rice and mix well.
