Chocolate pancakes with sour cream and fresh fruit

Once a friend of mine was coming over for lunch. I made a wonderful meal! But as I was going to put the cake in the oven, the oven gave way! I was stuck with cake batter, a dead oven and a friend soon to appear at my door, expecting a spectacular meal! I thought quick on my heels, and took out my non stick pan, and turned my cake batter into pancakes. They turned out amazing, and I have tweaked the recipe a little bit ever since. These pancakes are so simple, light and versatile( I serve them with fresh fruits like strawberries, cherries, mango, kiwi, oranges). They are a delight to eat and a spectacular vision on the plate! Personally I feel that these pancakes look quite glamorous on the plate !
So dedicate just 10 minutes in the kitchen to spin out this super delicious dessert

Ingredients
For the pancakes
Butter(I use cream ). 1/4 cup
Powdered sugar. 1/2 cup
All purpose flour. 1 cup
Unsweetened Cocoa powder. 1/4 cup
Baking powder. 2/3 tsp
Vanilla extract. 1/2 tsp
Buttermilk. 1/2 cup
Milk. 1 cup
Salt. A pinch

For the sour cream
Double cream. 1/2 cup
Yoghurt. 1/3 cup
Vanilla extract. 1/3 tsp
Icing sugar. 2 tbsp

For the chocolate sauce
Mars chocolate bar.
Milk. 1/2 cup

To serve
Any fresh fruit cut into cubes
Icing sugar

How to make
The sauce
Break the mars bar in a sauce pan and pour the milk. Bring to a boil stirring continuously till the chocolate dissolves completely. Simmer for 2-3 minutes and set aside to use before serving.

The pancakes
Beat together the sugar and butter, once light and fluffy, add milk 1tbsp at a time beating continuously to incorporate the milk. Once all the milk has been used, take a sieve and add all the dry ingredients( flour, baking powder, salt and cocoa powder), and pass them through it to get rid of any lumps. Add them to the butter-sugar mix along with the buttermilk and vanilla. Whisk lightly to get a smooth batter.
Heat a non stick griddle. simmer the heat and pour the batter onto it(1 ladle per pancake), it takes approximately 40-50 seconds per side. Use oil if required to avoid any sticking.

The sour cream
Whip the cream till its light and fluffy, but not stiff! Add in the yoghurt and vanilla extract & whip again. Add the sugar 1tsp at a time. Whip till you get a nice fluffy but soft cream.

To assemble.
I place one pancake at the bottom, put one dollop of cream on top, spoon over it my diced fruit and top it with the 2nd pancake. Drizzle liberally with the chocolate sauce and sprinkle with icing sugar!! Voila!!

PS: All the individual components can be prepared in advance to save time. Its just a matter of assembling them after the dinner and that hardly takes 30 seconds per portion!
