Orange cupcakes

The recipe for this particular cupcake originated when I wanted to make a non-chocolate,non-vanilla cake for my cousins! I made a batch of 54 cupcakes and my cousins( just 2 adolescent boys) finished around 30 of them within 5 minutes! I have ever since stuck to my original recipe and baked these colourful beauties at a number of occasions and they have been a success (read liked by all) every single time! They are not only easy but are so aromatic that your whole house smells of oranges for almost an hour after they come out of the oven! Try them and be pleasantly surprised by how delicious orange cakes are!


1/4 cup butter/ malai(heavy cream)
1/2 cup powdered sugar( i’l admit most of the times I use granulated sugar)
1. Cup all purpose flour
1 cup milk
1/2tsp baking powder
1/4 tsp baking soda
Salt a pinch( it adds to the flavour, do not omit!)
1 orange
1 tsp orange colour(liquid or powder)

How to make it
Take 1/2 cup milk and add to it the orange colour and mix well, keep aside.
In a large bowl mix together the butter with the sugar. Whisk with a bloom whisk,till it forms a blob! Add in 1/6 cup of milk and whisk again. Once it thickens add in 1/6 cup of milk,and whisk again, repeat this step again.
Take a very fine grater and grate only the orange portion of the orange peel(be careful not to add the white portion under the peel), add it to the butter mix. Add juice of half orange!
Now in a large sieve, add all the dry ingredients and pass it through the sieve.
Add the dry ingredients to the butter mix along with the coloured milk.Mix with a spatula to incorporate all the flour into the mix. IMPORTANT do not over mix otherwise your cake wont rise.
Pour into muffin moulds lined with cupcake liners,so that each liner is 2/3rd full.
Bake in a pre-heated oven at 180°C for 10-12 minutes or till a skewer inserted in the centre of the cupcake comes out clean.

optional icing
Mix together 1/2 cup butter with 2 tbsp of icing sugar and 1/4 tsp vanilla extract, and beat the butter until its fluffy, spoon over the cupcakes or use an icing bag!
