Chocolate cupcakes with Cinnamon infused white chocolate frosting

I must admit, whenever given the opportunity I choose to make cupcakes than a whole cake. This is simply due to the fact that cupcakes are not only easier and quicker to bake, but they are actually quite easy to serve as well!
So when a friend was coming over for coffee it only seemed perfect to bake a batch of delicious chocolate cupcakes to go with our lattes!
Looking to add some zing to my humble chocolate cupcakes, I quickly made a cinnamon infused white chocolate frosting which enhanced the flavour of the cupcakes.
They were well appreciated by my friend as well!
So here is the recipe, with a frosting as simple as making tea, and the whole recipe taking not more than 20 minutes from start to final serving for about 12 cupcakes!

Ingredients

For cupcakes
1/4 cup butter/ malai(heavy cream)
1/2 cup powdered sugar
1. Cup all purpose flour
1 cup milk
1/2tsp baking powder
1/4 tsp baking soda
1/4 cup cocoa powder
1 tsp vanilla extract
Salt a pinch( it adds to the flavour, do not omit!)

For frosting
1/2 cup white chocolate
1/4 cup cream
2 tsp icing sugar
1/2 tsp cinnamon powder

How to make it
The cupcakes
In a large bowl mix together the butter with the sugar. Whisk with a bloom whisk,till it forms a blob! Add in 1/6th of the milk and whisk again. Once it thickens add in 1/6th of the milk, repeat this step again.
Now in a large sieve, add all the dry ingredients and pass it through the sieve.
Add the dry ingredients to the butter mix along with the remaining milk. Mix with a spatula to incorporate all the flour into the mix. IMPORTANT do not over mix otherwise your cake wont rise.
Pour into cupcake moulds with cupcake liners, so that the cupcake liners are 2/3rd full.
Bake in a pre-heated oven at 180°C for 8-10 minutes or till a skewer inserted in the centre of the cupcake comes out clean.
Take out of the moulds and cool on a wire rack.

The frosting
Finely chop the white chocolate and keep aside. Bring the cream to a boil in a heavy bottomed pan, remove from heat and add in the chocolate and cinnamon, keep stirring till all the chocolate melts.
Allow to cool, then add in the sugar and mix well. Spread generously over the cupcakes!
