A warm aromatic soup is the best company for a cool spring evening! And when its loaded with vegetables and noodles its a double bonanza!
What I absolutely love about this soup is the tangy flavour lemon zest adds to it! And when it cooks your house smells divine!
As it cooks pretty quickly its my go-to soup for its easy to cook yet has a brilliantly complex aromatic flavour!
1/2 carrot, 1/4 capsicum, 1/4 onion ,1 clove garlic all finely chopped.
1 cup tomato puree
1 spoon oil
2-3 leaves spinach
1/4 cup noodles
1/2 tsp Red chilli flakes
1 tsp Red chilli sauce
1 spoon cornflour
Saute all chopped veg in oil for 2 minutes, add the tomato puree and saute for 3 minutes. Add 3 cups water mixed with the cornflour, salt, red chilli flakes n chilli sayce and d noodles.let it come to a boil.Then allow it to simmer. Grate the rind of the lemon(only yellow portion) and add to the soup along with the juice of 1/2 lemon. Add thinly sliced spinach and bring to a boil. Serve hot!
