Who doesn’t like a nice cheesy pizza…its the perfect indulgence! At my place we are huge fans of pizzas.. We make them from scratch and in numerous forms….deep dish, hand tossed, thin crust, rolled up, on slices of bread…..and my newest version…in the form of Cupcakes! Yes cupcakes! They are Bite sized, perfectly cooked and the way they seem to be stuffed with the veggies they are gorgeous!
This little experiment has now made me soo very excited …that I might turn some more of my favourites into cupcakes….what do u think will be perfect as cupcakes?
Veggies of choice chopped into cubes … I went with red n yellow peppers, capsicum, onion n corn!
Slices of mozzarella cheese
Bread dough as explained in the bread recipe I shared earlier!
How to make it
Once you have the bread dough ready, grease the muffin tray with some olive oil.
Roll out the dough around 1/2 cm thick. Cut out circles big enough to cover the muffin moulds completely. Line the muffin tray with the bread to create shells!
Mix together all of the veggies, sauce, dried herbs, chilli flakes, salt & pepper.
Spoon one spoonful of this mix into the bread shells,
Cover with mozzarella slices and drizzle some olive oil.
Bake at 200°C for 10-15 minutes.
