So this salad is 100% inspired by the tomato cucumber raspberry vinaigrette summer salad from A Lot On Your Plate! I made it for lunch! And its nice and refreshing!
Though I tweaked it a lil bit, I opted out of the raspberry vinegar and used white wine vinegar instead, and completely omitted the onion powder( i try to avoid onions in the summers!), but added a hint of capsica sauce!
The salad was without doubt refreshing, and lovely! Its perfect for the scorching summer days!
1 tbsp of extra virgin olive oil
2 tbsp white wine vinegar
1/3 tsp corse ground pepper
1/4 tsp capsica sauce( hot pepper sauce)
salt to taste
How to make it
Slice the cucumber and tomatoes in rough 1/2 inch pieces. In a large bowl, mix olive oil, vinegar, capsica sauce, salt and pepper.
Drop in the cucumber and tomato pieces and toss.
