Eggless Spiced Fruit Cake/ Christmas Cake/ Plum Cake( alcohol free)

2 Christmas’ have passed and I have been really trying to complete all my incomplete posts…
Lets start with the one which has got many requests from my friends… The Plum Cake..
My version Is eggless and alcohol free, though you can add rum to it as well by substituting it for the apple juice and soaking all the dry fruits in rum for about 5-6 days!
Its the perfect winter tea time cake! It can be had as such, or covered in a luxurious sheet of almond marzipan!

Ingredients
The spice mix
1/4 tsp nutmeg powder
1/4 tsp cinnamon powder
1/4 tsp dry ginger powder
1/2 star anise( powdered)
3 cloves

The dry fruit mix
1/4 cup each of almonds, cashew nuts, raisins, dry prunes, walnuts
1/2 cup any fruit peel of your choice( also called tuti-fruti)
Apple juice enough to soak the dry fruits in!

The cake
1/2 cup butter
1/3 cup sugar( powdered)
1/3 cup brown sugar
1 1/2 cup all purpose flour
1/2 tsp baking soda
2/3 tsp baking powder
1 tbsp curd/ yoghurt
2 tbsp milk

How to make it
Soak all the dry fruits in the apple juice and let it sit for 20-24 hours in a cool place.
Once the fruits have soaked, cream the butter and sugar in a large mixing bowl with a bloom whisk. Add in the milk and mix again.
In a large bowl mixx the flour, baking powder, baking soda and the spice mix.
Strain the fruits, an chop them roughly!
Add these strained dry fruits to the flour mix.
Now add this to the butter mix along with a third of the apple juice left after straining the fruits.
Fold gently using a spatula.
This mix should be as thick as a regular cake mix. If its too thick add in more juice.
Pour this mix into a 8 inch round tin lined with brown paper.
Bake in a preheated oven at 180°C for 35-40 minutes or till a skewer inserted in the centre comes out clean!
Once done, transfer the cake tin onto a wire rack, allow it to sit for 10 minutes then demould and allow it to cool!
Your Spiced Fruit cake is ready!
Serve it with a glass of hot tea…
