5 minute sautéd Broccoli…

This recipe is a pure example of my style of cooking and what generally drives my cooking… Search for fresh, quick food that will satisfy my cravings instantly!
This evening almost minutes… And I literally mean minutes before soup was served I saw this beautiful broccoli head in my fridge and got this voice in my head … ” it needs to be cooked..NOW”!
What followed was a totally unplanned recipe… Totally spontaneous with minimal ingredients… I am super proud of the end result as it tasted WOW… Perfect for a quick snack or as a side dish to your chicken or lamb!


A medium head of Broccoli
Salt to taste
Fresh crushed pepper to taste
Minced garlic 1/2 tsp
Butter 1/2 tsp
White wine vinegar 1/2 tsp
Any medium-soft cheese grated 1 tbsp

How to make it
Start by cutting up the broccoli into bite sized florets.
Pour fresh boiled water over them and allow to sit for a minute. Drain and add these florets to ice cold water. Allow to sit for another minute and drain. This is how you blanch Broccoli you get the perfect crunch!

Heat the butter in a non stick pan, add the garlic swirl for 30 seconds and throw in the broccoli, add the pepper and salt. Toss around, add the vinegar and toss again.
Add the cheese and toss for 30 seconds. Serve immediately and enjoy the crispness of the broccoli with the mellowed cheesy-buttery flavour!
