Vegetarian Thai Red Curry

I seriously want to apologise cause I have no clue where did the previous post for Thai Red Curry vanish! My bad…I’m reposting the recipe below…
Thai red curry is undoubtedly one of the yummiest Vegetarian dish in Thai cuisine!
Its simple to prepare and very very nutritious as well… A new favourite at my place!
Make it and enjoy the rich flavours..

Ingredients
For the red curry paste
4 Kashmiri red chilli whole or 2 tbsp of deghi mirch powder(Paprika powder will do as well), soak in 1/2 cup warm water,
1/2 onion,
7-10 flakes garlic,
1/2 inch ginger,
rind of 1 lemon,
roasted 1 1/2 tsp whole coriander seeds,
roasted 1 tsp cumin seeds
1 tbsp lemon juice,
6 whole black pepper corns

For the curry
1 tbsp oil,
veggies of choice- like broccoli, mushrooms, baby corn, bamboo shoots, beans, carrots bell peppers etc. cut all veggies lengthwise into 1 inch sticks!
2 cups coconut milk,
1/2 tsp soya sauce
100 gm paneer/ tofu cut into 2/3 inch cubes
salt to taste
1/2 tsp sugar,
1/3 tsp dries basil leaves or 4-5 basil leaves

How to make it

Red curry paste
Grind everything in a grinder till u get a smooth paste. Keep aside

The curry
Heat the oil, add the red curry paste and stir fry for 2-3 mins.
Add 2 tbsp coconut milk, then all the veggies, cook for 2-3 mins.
Add the remaining coconut milk, soya sauce and simmer for 7-8 mins.
Add paneer/ tofu, salt, sugar, basil leaves boil for 3 minutes!
Serve hot with fresh steamed rice!
