Mushrooms provide many of the nutrients similar to vegeatbls, as well as the nutrients more commonly found in meat, beans or grains. Mushrooms are low in calories, fat-free, cholesterol-free, gluten-free, and very low in sodium, yet they provide important nutrients, including selenium, potassium, riboflavin, niacin, vitamin D and more.
They are versatile, they cam go in your quiche, your pie, in your pasta, as a curry or simply sautéd.
This version of sautéd mushrooms are my new favourite….absolutely delicious! They make for the perfect side dish with your pasta or bread, I even like them as a snack. They are a great stuffing for your pita bread pockets as well.
Easy, simple and quick..make them and devour the tangy flavour!
200 gm Button Mushrooms ( cut the big ones into half, keep the small ones as such)
1 tbsp Butter
1/2 tsp olive oil
A generous helping of fresh ground pepper
Salt to taste
1/2 tsp red wine vinegar
1/2 tsp lemon juice
1/4 tsp Parsley
How to make it
Heat the butter and oil in a wide base fry pan. Add the mushrooms and sauté till the water from the mushrooms dries up. Add the pepper, salt and parsley. Sauté for 30 seconds. Add the vinegar and sauté on high flame till the mushrooms develop a golden brown colour. Splash with lemon juice and serve immedietly!
