Caramel Popcorn

Popcorn… A movie night favourite…
I have always been a fan of salted butter popcorns. But I was recently introduced to caramel popcorn, and to my surprise, they tasted really good!
Apart from the fact that I can’t chew on these for too long, they make for a great snack!
I found this recipe on thekitchn.com . I omitted the baking in the oven part, and I used a pack of readymade popcorn(yup lazy me)!
They are easy and quite delicious!
Make them and be pleasantly surprised!

Ingredients
for the caramel sauce
3/4 cup unsalted butter
1 cup brown sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
1/4 teaspoon baking soda

4 cups readymade popcorn

How to make it
The Caramel Sauce
Melt the butter in a heavy bottom over medium heat. Mix in the sugar until the sugar is completely melted. Increase the heat to medium-high and bring the mixture to a boil. Once it comes to a boil boiling, continue to do so for 3-4 minutes while stirring and scraping the bottom of the pan continuously. The longer you cook the caramel, the crunchier it will be. Just remember not to burn the caramel!
Add in the salt, vanilla extract and the baking soda. Whisk well!

To assemble
Put the readymade popcorn in a large mixing bowl.
Once the caramel is done, just pour the sauce over your popcorn, and mix well with a spatula.
Transfer the popcorn onto a baking tray and allow it to cool.
Once its cooled down, just roughly separate the corn pieces!
