Salads are one of the most nutritious dishes! Its a super healthy way to get your dose of fibre n nutrients! And its a double pleasure when you can spin it to convert the boring bowl of greens into something that is colourful, packed with flavour and is without any unnecessary (read guilty) calories in the form of oil laden dressings!
Beetroots are rich in Folate and manganese and are believed to lower blood pressure as well!
This salad is super healthy as the dressing has a yogurt base with a generous dose of honey!
The sweet honey of the dressing against the sourness of the yogurt coupled with the freshness of the beetroots and the other veggies makes this, one of the tastiest salads I have yet created!
I personally was quite pleased with it!! I will be definitely making it again! You should also give this salad a try and eat it not only with your mouth but also with your eyes as this salad has some beautiful vibrant colours!
For the Salad
2 medium sized beetroot grated ( large size grate)
1/2 cucumber, 1/4 capsicum cut into medium sized strips
1/2 cup red cabbage shredded
For the dressing
3 tbsp yogurt
1 tbsp honey
1/2 tsp fresh ground pepper
1/2 tsp fresh grated ginger
Salt to taste
How to make it
In a large bowl mix all the vegetables.
In a separate bowl mix the ingredients for the dressing.
Pour the dressing over the veggies just before serving. Toss well and serve immediately!
PS: Wash the vegetables carefully before cutting!
