Eggless Orange Marmalade Cake

I remember as a kid, there was some cartoon that me & my sister used to watch. I don’t exactly remember what cartoon it was, but all I remember is that in that cartoon the main hero of the cartoon was totally in love with “Marmalade Cake”. That was a time when I had no clue what marmalade was. All I knew was Jam. 

Last week I made some marmalade from scratch, and it turned out amazing!! Absolutely delicious! I will be posting the recipe for that really soon!

Once the marmalade was ready, I just had to make the marmalade cake. I did some net-surfing and came across this recipe that was published in the New York times. I tweaked it a little bit to make it eggless, and the end product was just fabulous! If you love oranges, this is THE CAKE for you. Have it with a cup of my Hot Chocolate Mocha. Perfect Spring time cake!

Orange Marmalade Cake

  • Servings: 4-6
  • Time: 45 minutes

Ingredients

  • 1/2 cup butter
  • 1/3 cup sugar
  • 1 cup all purpose flour
  • 1 cup buttermilk ( I used 1cup milk and added 1 tbsp lemon juice to it, and allowed it to sit for 5 minutes)
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate soda (baking soda)
  • 1 tbsp orange juice
  • Zest of 1 medium sized lemon (about 1/2 tsp)
  • Zest of half an orange (about 1/2 tsp)
  • 1/2 cup orange Marmalade

For the glaze

  • 3 tbsp icing sugar
  • 1 tbsp Orange juice
  • 2 tbsp Orange Marmalade
  • 1 tsp butter
  • a drop of orange food colour (optional)

 

How to make it

The cake

  1. Cream the butter and sugar till light and fluffy!
  2. Add 1/3 cup of buttermilk and beat again till fluffy! Repeat again!
  3. Add the lemon and orange zest and mix well!
  4. Sift the flour, baking powder and the baking soda.
  5. Add to the butter mix!
  6. Mix the orange juice, marmalade and the remaining buttermilk and add this to the cake mix. ( if you want you can chop the peel pieces in the marmalade, I left them as such as it added to the visual appeal of the cake)
  7. Mix carefully using a spatula, just so that there are no lumps. (DO NOT OVERMIX)
  8. Pour into a greased cake tin and bake in a preheated oven at 180°C for 20-25 minutes or till a skewer comes out clean! It will have a rich golden coloured crust!
  9. Allow it to cool on a wire rack.

The Glazing

  1. Melt the marmalade in a saucepan. Take it off the flame.
  2. Add the butter and let it melt.
  3. As the butter melts, whisk in the juice, food colour and the icing sugar. Whisk well to get a smooth sauce.

To Assemble

While the cake is still a little warm, pour the glaze over the warm cake and allow it to drizzle down the sides. Let it stand for 2-3 minutes. Your cake is now ready to eat!
