It’s been more than a month since my last post! I have been so busy lately with guests and other stuff that Even though I have cooked a lot of stuff, I haven’t really got the time to sit and write about it. I finally thought of snapping away from my laziness and write down this super easy and Yumm recipe for the gorgeous treats that are Banana cupcakes with peanut butter frosting.
So this is how I had begun to write this post. But now that I have told all of you the reason for my absence, Let me start afresh!
There is practically no occasion where one cannot enjoy a cupcake! They make for the perfect dessert and the perfect snack and yes are the best comfort food! I had been thinking of making these Banana cupcakes with peanut butter frosting for a really long time, but finally got to make them when my school friend visited me after a long 11 years!
As we sat and chatted for endless hours these cupcakes were perfect accompaniment! They are super super easy to bake and the peanut butter frosting is divine!
Give these a try and you will definitely look for an excuse to make them again! the banana in the cupcakes goes perfectly with the peanut butter frosting on the top.. This is Food Heaven!
Banana Cupcakes with Peanut Butter Frosting
for the banana cupcakes
- 1/4 cup butter/ malai(heavy cream)
- 1/2 cup powdered sugar
- 1. Cup all purpose flour
- 1 cup milk
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- Salt a pinch( it adds to the flavor, do not omit!)
- 1 ripe banana
for the peanut butter frosting
- 3 tbsp creamy peanut butter
- 4 tbsp soft unsalted butter
- 2 tbsp icing sugar
How to make it
The Banana Cupcakes
In a large bowl mix together the butter and sugar. Whisk with a bloom whisk,till it forms a blob! Add in 1/6 cup of milk and whisk again. Once it thickens add in 1/6 cup of milk,and whisk again, repeat this step again (use only half cup milk for this process).
Mash the banana with a fork and add to one of the separated butter mix.
Now in a large sieve, add half of all the dry ingredients and pass it through the sieve.
Add the dry ingredients to the butter mix along with 1/4cup milk.Mix with a spatula to incorporate all the flour into the mix. IMPORTANT do not over mix otherwise your cake wont rise.
Pour into muffin moulds lined with cupcake liners,so that each liner is 2/3rd full.
Bake in a pre-heated oven at 180°C for 10-12 minutes or till a skewer inserted in the centre of the cupcake comes out clean.
The Peanut Butter Frosting
Cream together both the peanut butter and the unsalted butter, once the mix is nice and light add in a spoon of sugar and cream again. Repeat the process till all the sugar is used up. Set aside and let it rest for 10 minutes before using.
Spoon the frosting into a piping bag and fit it with a star nozzle, pipe swirls of frosting on the cupcakes. You can garnish these with choco chips or choc sprinkles if you wish… Voila.. as easy as that.. Enjoy!
